THE RUBINO DUO TO OPEN A NEW OUTLET IN VALLETTA

Rubino, is probably one of the most highly-acclaimed restaurants in Malta. This family-run restaurant (also the oldest eatery in Valletta) is led by Michael Diacono and his nephew Edward Diacono, has no printed menu but instead, a daily-changing menu using the freshest ingredients (examples of their dishes below).

Now that you have some background information (incase you've not been or heard of Rubino), I can reveal that the Diacono duo are opening a new concept called Rubino Universal Store.


Opening early next year (official month TBC), Rubino Universal Store will concentrate on speedy and affordable light lunches such as delectable antipasti, hearty sandwiches, salads and a few daily specials. There will also be a gourmet take-away option for those who have no time (or can't be bothered) to cook.



Visitors of Rubino Universal Store will be able to pick up different chutneys, their famous caponata and jams in jars... all with their own branding.

They are currently considering opening three evenings a week to offer food platters and a few pasta dishes but that is still to be confirmed.
