WHERE TO EAT AN AUTHENTIC CARBONARA IN MALTA

 

Carbonara is one of the easiest dishes you can make and really shouldn't be messed with. A true carbonara should only have these four ingredients: guanciale, eggs, pecorino cheese and black pepper.

For a true taste of Rome/Italy, there shouldn't be any additional or alternative ingredients (such as parmesan or bacon). Cream is just sacrilege. 

Here is a list of restaurants in Malta where you'll find carbonara using only guanciale, eggs, pecorino cheese and black pepper.

This unapologetically Italian eatery is not only home to one of my favourite pizzas in Malta, but also to a carbonara that will please all purists. 

On the plate, it doesn't look too appetising, however on the palate... it's the real deal!

This super cool cafe-salon hybrid takes pride in its carbonara which only consists of the magic four ingredients! As it very well should be.

Nonna style carbonara from this authentic Italian kitchen. They use rigatoni instead of spaghetti, and the owner (who is from Rome) can tell you the very valid reasons why. One thing is for sure, the carbonara itself is legit.

They've taken the real ingredients a carbonara must have and served it with a slight twist.

Here you'll find crispy guanciale, a pepper-pecorino cheese emulsion and egg yolk. The dish is then topped with a poached pepper-crusted yolk (to mix with the pasta yourself).
