MICHELIN CHEF RETURNS TO NAXXAR WITH A FIVE-COURSE MALTESE INSPIRED MENU

 
 

As promised, chef Paolo Barrale will return to Palazzo Parisio on 24th October following the success of his previous Michelin themed dinner back in June. However this time round, his menu will focus on Maltese ingredients. 

The Maltese inspired menu will include crudo of tuna with a tonnata sauce, stuffat tal-fenek (local rabbit stew with scampi and citrus carrots), minestra with beans, mussels, sea urchins and a hint of coffee and a fillet of veal (served with seared foie gras and shallots of red wine).

Barrale was awarded a coveted Michelin star in 2004 whilst working at Marennà in Sorbo Serpico.

The menu is priced at €120 per person and includes five courses at Michelin level and wine pairing.
