RAMLA BAY'S LAVISH VEGAN BUFFET IS BACK AND BIGGER THAN EVER

The Ramla Bay Resort's exceptionally popular vegan buffet is back with a bang on Friday 13th December, and if the past events are anything to go by... you'd definitely would not want to miss out (yes, i'm talking to you too, carnivores).

The Christmas (and sixth) edition of this entirely plant-based buffet will include hearty, creative and damn right lavish dishes to tantalise your tastebuds.

The antipasto offering will include cashew nut mousse and cherry tomato chutney cups, spicy bean and avocado empanadillas, porcini mushroom money bags, crispy corn and tofu dumplings and much more.

Soups will come in the form of either a split pea and squash soup (with maple onions, almond meal crumble) or a kale, white bean and farro minestrone (with toasted rosemary ciabatta croutes).

There will be a Koshari Live Station (an Egyptian dish made of rice, macaroni and lentils), as well as a Sushi Live Station where guests will build their own sushi using ingredients such as tempura tofu, dill infused compressed watermelon, mango caviar, king oyster scallops and more.

Like pizza? The vegan pizza options will consist of a wholemeal deep pan pizza (hummus, grilled zucchini, charred bell peppers, caramelised onions, fresh mint leaves), a pepperoni pizza (with coconut mozzarella) and a cauliflower crust pizza, (with basil pesto, sautéed cremini mushrooms, black olives, chilli flakes, baby spinach leaves).

Pasta lovers will be able to tuck in to either ricotta and spinach cannelloni, beetroot gnocchi (with seared mushrooms, asparagus, toasted pumpkin seeds, soy cream velouté) or wholemeal paccheri topped with meatless bolognese sauce and hemp seed grated cheese.

If that's not enough, over a dozen hearty mains will be at the table. Some of these include root vegetable and nut loaf, stuffed zucchini cups, chickpea and sweet potato sliders, buffalo cauliflower wings, roasted stuffed peppers, vegetable and dhal chilli, rainbow pad Thai noodles and much much more.

For dessert, head over to the vegan cheese station, the American pancake and fruit station or wrap your lips around the plethora of homemade pastries that the chefs have prepared.

Booking is highly recommended and tickets cost €24.95 for adults and kids €11.00 (4-12 years).
