REVIEW: ROSSINI CIBO VINO - UNIQUE AND SOPHISTICATED ITALIAN DISHES IN A HIIDEN GEM

 
 

Although it's not a new restaurant, blink and you might miss Rossini Cibo Vino. This Italian gem which specialises in crudo, seafood and unique pasta dishes, really exceeded my expectations.

If you want a memorable dining experience, I urge you to go to Rossini in St Julian's and then tell me if i'm wrong.

 

Upon entering the doors, you can be forgiven for underestimating what is to comes next. Weather permitting, I'd suggest dining in the blissful and stunning outdoor garden like terrace, the perfect backdrop for a bespoke culinary journey.

Every dish is aesthetically stunning and creatively prepared. I'd highly recommend to start with the raw red prawns with white chocolate and papaya, a delightful signature in its own right. The sweetness of the white chocolate is surprisingly not overpowering. And the red prawns are without a doubt of the highest quality.

 

For the ultimate indulgence, you must go for the scampi carpaccio topped with three different caviars. Flavours that will instantly burst in your mouth and linger on.

Another suggestion are the prawn tails wrapped in kataifi pastry. Expect fat, velvety prawns, wrapped in seasoned vermicelli-like shredded pastry, then fried to a golden crunch.

 

There are so many creative pasta dishes to choose from, it took me about ten minutes to decide. Fortunately enough, I opted for the homemade black ink tortelli and burrata with spiny lobster sauce and thyme and coconut foam. This dish sent my tastebuds into overdrive, exceptionally executed.

 

If you're a fish lover, the tuna tataki coated with sesame and poppy seeds is a must. The contrasting flavours of this dish is thanks to the accompaniment of fruit, citrus and steamed broccoli. You wouldn't think it works, but it really does.

Overall, Rossini Cibo Vino offers a splendid dining experience from A to Z. It is full of Italians (which is a good sign), the menu is vast and the dishes are innovative. It is perfect for a date night or a long dinner with friends.
