SLURP AWAY ON REALLY AUTHENTIC TONKOTSU RAMEN IN ST JULIAN'S - THE JAPANESE WAY

 
 
Let me get this out of my system as I never get bored of saying it (because I still miss it all the time). Before Malta, I lived in Tokyo for about three years. Right, let's begin.
 
During my time in Japan, my lunch breaks consisted of slurping on a bowl of ramen nearly every day. I can pretty much tell you that I mastered the differences between the good and the bad, but also how many varieties there are. KNOW your ramen and never get fooled again.

Miso, shio, shoyu, and then there's one of my favourites... tonkotsu. It makes me sick to my stomach how many awful westernised ramen there are here (I will just leave it as that).
 



Back to Tonkotsu. Tokyo Fried House in St Julian's, which I find to be one of the most authentic Japanese joints (reminiscent of the izikayas I used to frequent), have launched a plethora of new ramen dishes... one of them includes tonkotsu (to my knowledge the only place who currently has it).
 
You wouldn't believe the labour it takes to create tonkotsu. Delicious straight silky wheat-based ramen noodles (not egg or instant noodles) swimming in a pork-bone tare (broth) which takes 12 hours minimum to create. Then, that slow-cooked chashu pork belly. It is the best comfort food.
 
Tokyo Fried House does it authentically. The broth is creamy (a tonkotsu broth should never be clear) and flavoursome. The toppings are on point - boiled eggs, seaweed/nori sheets, woodear mushrooms, green onions and a slice of chasu pork (however for the price, they should have put two in there).
 



You'll also find that they've added new ramen dishes such as Gyokai Tsukemen and Gyokai Shoyu Ramen. From December, they'll be removing a lot of the fried items on the menu and will be changing to a (half) ramen noodle eatery. 
 
In japan, slurping loudly is a sign of appreciation, so head over to Tokyo Fried House and slurp slurp slurp away! Oishii!
