It's music to my ears when I hear about the opening of a new restaurant from a local chef with such an envious and strong culinary background... and that's exactly what Letizia Vella is doing with the ribbon cutting of The Golden Fork (opening tomorrow).
Located in Attard, The Golden Fork tells its story through an ever-evolving menu of seasonal dishes inspired by Mediterranean cuisine using the freshest ingredients in a refined but relaxed setting.Letizia's extensive culinary background includes working under Heston Blumenthal, one of the best (and one of my favourite) chefs in the world. She worked in the UK with him at The Fat Duck (three-Michelin) as an intern and Dinner by Heston (two-Michelin) as a Chef de Partie (i've been to both and all I can say is wow).
In Malta, she was employed in the kitchens of Barracuda, Root 81 and HSixty6.
For starters, the reasonably-priced menu includes lamb croquette, grilled & spiced octopus (with roasted shallots, saffron veloute and fennel) and butternut squash risotto (with cashew nuts, parmesan crisp and toasted pumpkin seeds).
Main courses come in the form of pan fried sea bass (carpet of vegetables, citrus gel and burnt onions), lamb chump and roasted cauliflowers (textures of cauliflowers, brown butter and mint).
What a lovely addition to Malta's culinary scene.
