What happens when a chef that holds two Michelin stars teams up with the local executive chef of one of the finest hotel brands? Let me tell you, because it's happening.
On October 23rd, Stefan Hogan, the executive chef of Attard's Corinthia Palace, is joining culinary forces with Pino Cuttaia, the chef patron of the two Michelin restaurant La Madia in Sicily.
The gastro duo will organise a tantalising seven-course menu paired with carefully-selected Frescobaldi wines. The chefs will each prepare a selection of courses, to be enjoyed at the Corinthia from 7.30pm.
Pino's food offering will showcase his Sicilian roots and his exemplary cooking techniques that gained his eatery its first Michelin in 2006 and the second in 2009. You can expect pine cone smoked cod with confit tomatoes, 'Anchovy Painting' (with tuna bottarga mayo), calamari with squash and bottarga and beef tenderloin with smoked ash oil.
Hogan will serve refined Maltese-inspired dishes with a twist such as brassicas (with clams, razor clams and beans), risotto with pomodoro and gbejniet cheese, a pre-dessert and pumpkin tarte tatin with carob ice cream and jam.
The price of the dinner is €300 per person for several fine courses and wine pairing. There will also be a water masterclass held by Aqua Panna and S.Pellegrino. The event is in partnership with WORLD of WINES by Charles Grech and Eventia.
