FAT LOUIE'S SLIDES PORK TONKOTSU RAMEN INTO ITS MENU FOR A LIMITED TIME
Fat Louie's, the popular smokehouse in St Julian's known for meat, are adding tonkotsu ramen to their menu starting from Tuesday 14th January. Tonkotsu (which means pork bone broth in Japanese), although loved everywhere in Japan, originates from Fukuoka.
I was kindly invited by Nicholas Diacono, the big boss, to test it out for my honest opinion and see if anything had to be improved. Why? I may not say it enough (sarcasm), but aside from being a food writer, I lived in Tokyo for two years and basically went to a ramen joint on my lunch breaks nearly every day... so I know what's up.
When I sat down, he served up two kinds. One with beef and one with pork belly. The former didn't really make sense, although the beef was excellently-cooked, it was a bit too western and left a coating.
After suggesting a few very minor improvements here and there, he decided to take my advice and go with the pork tonkotsu. The broth, which was made using trotters, heads, femur bones and collar bones, was creamy and authentic.
So there you have it, from Tuesday, you'll be able to slurp away on a generous portion of tonkotsu ramen consisting of exceptionally slow-cooked sous vide pork belly, six-minute boiled egg, scallion oil and a very legit pork bone broth that takes a few days to make.
