REVIEW: THE SKYROOM COCKTAIL BAR & GRILL - A SUPERLATIVE SUPPER IN SLIEMA

 
 

Some of my restaurant reviews are harder to write than others, this is the case with The Skyroom Cocktail Bar and Grill in Sliema.

Handled by the ever so talented chef Marvin Schrembi, who has a culinary background that impresses, it is truly an oasis that gives you an exemplary dining experience from A to Z... and that is not an overstatement.

The minute you step out of the elevator on the 14th floor, you'll be taken aback by the stunning Manhattan style bar, jaw-dropping sea views and the staff donning stare-worthy dapper uniforms. Did I already mention the views?

The Skyroom Cocktail Bar & Grill is the perfect place to be for any epicurean or lover of dining out. Everything has been meticulously chosen from the glassware and cutlery, to the top quality plates and textiles. This is evident.

if you love seafood executed perfectly, Marvin will ensure that you get the best of the best in terms of crudo dishes which are frankly all works of art, both aesthetically and to the palate.

Crudo usually works best (in my opinion) when it is lightly seasoned or topped. Marvin has changed the raw fish game by pairing them creatively with ingredients that do not overpower, but rather heighten.




Showstoppers included the local prawns with stracciatella and pistachio, the salmon with pickled veg, the swordfish crudo with orange and bee pollen, a fantastic grouper with sea urchins and red wine salt, and of course, the tuna with pickled shallots.

The fish of the day came in the form of a chunky grouper married with a succulent ratatouille, perfectly flaked and flavoured.

As the name suggests, the cocktails are equally as important as the food here and expertly crafted by top mixologists (such as a hickory-smoked negroni).

I honestly cannot recommend Skyroom enough. I want to digress, but I think i'll finish off by saying... just go. It's a solid 9/10 from me.
