Paul’s Bistro Has Quietly Closed Down After Eight And A Half Years In Valletta

There was no public announcement. Paul’s Bistro, set inside a converted 16th century well on Triq San Gwann in Valletta, closed its doors on 31st May — and for many, the news surfaced quietly, through word of mouth.

For nearly a decade, it had been a familiar name on the Valletta dining scene — a chef-led kitchen known for Mediterranean dishes built around local produce, a considered wine list, and a setting that was hard to replicate.

When I reached out to chef patron Warren Cremona, what came back was a remarkably honest response.

Warren didn’t deflect. He took responsibility as the person at the helm — even for things that weren’t always within his control. “I must have failed and let down some of my customers for a reason or another, and for that I apologise. Since I was the chef patron, things happened under my watch, therefore I was always the responsible figure.”

He spoke about financial difficulties, about a saturated market, about an industry that has increasingly shifted toward location over quality. And he ended with something that sticks: “Unfortunately tourist traps are better than us.”

His ethos from the start had been simple — that “chefs are ambassadors of their culinary identity.” He held himself to that, even at the end.
