GENIUS GASTRONOMY: A SEVEN-COURSE TASTING MENU WITH 'ICY ELEMENTS' IS HAPPENING IN VALLETTA

 
 

The Thirsty Lawyer never fails to impress me with their unconventional and creative molecular gastronomy. After their first infusion event last month was a hit, they're back for round two.

On July 26th, The Thirsty Lawyer invites you to indulge in a seven-course Siberian Summer Degustation menu. The theme is to have each dish featuring an icy element.

 
 
 
 
 
The molecular menu includes:

- Pea soup with lemongrass and shiitake mushrooms, with liquid nitro to form an icy crust

- Prawn tartare served in acidic blue butterfly tea jelly cup, topped with prawn bisque foam

- Smoked salmon gravlax with balsamic caviar and salmon skin crisp served on a citric yoghurt ice cream

- Sphered mushroom tortellini served in a sphere of porcini stock

- Jamón ibérico rolls and melon jelly topped with mint foam

- Smoked duck with forest fruit jam and frozen crouton sand

- A live plating presentation of chocolate truffles, mixed fruit coulee, lemon meringue and liquid nitro chocolate

 
 
 
 

Tickets cost €55 per person and the price includes all seven courses where each dish will be explained by the chef.
