Malta’s New Pasta Brand Is Giving Surplus Bread a Second Life. Launches with 1EUR Pasta Event
Yesterday’s bread is tomorrow’s pasta. Quite literally, in this case.
A new Maltese pasta brand is turning surplus bread into something considerably more interesting, and to celebrate its official launch, Pasteca is throwing a street pasta party at Tabula Rasa in San Gwann on Saturday 14 November, from 3pm.
The main attraction? Freshly cooked pasta for just €1 a portion, the price of a traditional Maltese loaf. There’ll also be DJ sets, beer and freshly baked Maypole pastries. Better still, all proceeds from the pasta portions sold at the event will go towards The Burnt Chef Project, a non-profit organisation tackling mental health stigma within the hospitality industry.

But there’s a rather clever concept behind the pasta itself. Pasteca, brainchild of Anton Curmi, collects surplus bread from local artisanal bakeries within 24 hours of baking, dries it and mills it into flour. This is then combined with ancient Sicilian grains to produce pasta using traditional methods, including slow-drying and bronze extrusion.
The idea is to tackle Malta’s bread waste problem, giving perfectly good bread a second life rather than sending it to landfill.
Currently available in casarecce and cavatelli, the pasta retails at €4 for a 400g packet, with more shapes planned. Tabula Rasa will stock the range permanently, while further retail outlets across Malta are expected to follow. Pasteca also supplies restaurants.
So, €1 gets you a plate of pasta, supports a worthwhile cause and introduces you to a product that’s doing something useful with food waste. Not a bad second career for a loaf of bread.
