Sphinx Has Opened Its First Ice Cream Shop in Birgu. And the Cone Is Getting a Maltese Makeover.

One of Malta’s most recognisable pastizzi names has opened its first-ever ice cream shop in Birgu, and rather than settling for the traditional cone-and-scoop arrangement, they’ve apparently decided that the pastizz deserves a promotion.

The ice cream comes as soft serve or sugar-free yoghurt, with nocciola, cherry and pistachio among the flavours. You can have yours in a cup, or go considerably more Maltese with a tartizz base and sponge cake.

Sphinx has spent decades putting things inside pastry. Apparently, putting ice cream on top of it was the logical next step.
